Penne Alfredo with Peas & Sweet Red Pepper
This recipe is my own, I pieced it together out of several different recipes.
I didn't take step-by-step pictures because I was super busy at the time!
While your pasta is boiling, you make the homemade alfredo sauce. It is so much better than what you buy in the store.
The best part is that it takes 15 minutes or less to make!!!
Ingredients:
1/2 (16 oz.) package of Penne Rigate Pasta
2 cups Half-and-Half
1/3 cup Butter
2 Garlic cloves, smashed or minced
1 cup of freshly grated Parmesan Cheese
1/2 tspn dried Parsley
1/4 tspn Salt
Pepper to taste
1 cup frozen Peas, thawed
1 Sweet Red Pepper, sliced into strips
Directions:
1) Boil pasta according to package directions. Add peas and sweet peppers to boiling pasta about 3 minutes before the pasta is finished cooking. Drain well.
2) Meanwhile, in a medium stainless saucepan, cook half-and-half and butter over medium heat for 12 minutes. Whisk often so that it does not stick to bottom of pan. Do not allow to boil, lower or remove from heat if you need to.
3) Remove from heat and whisk in cheese, parsley, salt and pepper. Toss with pasta and serve!
So yummy!

we do not buy other home supplies every week. so it varies...I just buy when we need stuff. And I agree...fresh produce is worth the extra $...I just try to find the best sales on it each week. hope this helps! :)
